Two spices are derived from the nutmeg tree, nutmeg and mace. Nutmeg is the seed of the tree, while mace is the dried, lacy, reddish covering of the seed. Nutmeg has a characteristicly pleasing fragrance and slightly warm taste. It is used to flavour many kinds of baked goods, confectionery, puddings, meats, sauces and beverages. |
