Mace is the thin, bright-red aril or lace-like covering over the shell
of the nutmeg. Its flavour is similar to nutmeg but more delicate.

Mace is lighter in colour and often used in light-coloured dishes
where the darker flecks of nutmeg would be undesirable. A small
amount is enough to enhance many dishes, adding fragrance,
without imposing too much flavour.
